Aleppo pepper is made from a type of chilli that was originally grown around the city of Aleppo in northern Syria. The seasoning is now used throughout the Middle East. Aleppo pepper is made from ripe chillies, the flavour of which ranges from pleasantly sweet to smoky. The seeds are carefully removed and the red chillies are then flaked. The deep red colour of this seasoning adds visual appeal.

This striking red chilli is moderately hot and has a noticeably fruity flavour.

The highly aromatic Aleppo pepper goes exceptionally well with stewed lamb, mincemeat and bean dishes. As a topping for purées and vegetable terrines it adds flavour and visual appeal to the plate.

With its decorative colouring, Aleppo pepper also makes an excellent table spice for adding moderate heat.
