Mustard caviar with mixed light/dark mustard seeds, Dijon-type sharpness and round honey note
dark grain mustard caviar: the mixed light/dark mustard seeds give dark grain a sharpness that does not come through until the honey note has subsided and does not numb the tongue but leaves a pleasant aftertaste on the palate. This visually very attractive combination with its Dijon-type sharpness and relatively small seeds harmonises well with fresh and ripe cheeses, but overall it is sufficiently restrained to be not out of place anywhere where mustard would be a welcome addition.
