Harvesting

The timiz pepper in the FINEST FOOD AGE PEPPER COLLECTION comes from the highlands of south-western Ethiopia. This wild pepper of the Piper capense species is a climbing plant that grows on the huge trees of the rainforest at altitudes over 2,000 metres. The fruit clusters, which look like long, small catkins, are picked by hand. The pepper harvest is a centuries-old tradition for the local community. Because it is difficult to dry the pepper catkins naturally in the moist rainforest climate, the harvested produce is dried over an open fire. It is this that gives timiz pepper its characteristic smoky flavour. Finally, the dried pepper is carefully sorted by hand.

A sustainably managed relationship between farmers and trading partners ensures that farmers are paid fair prices while customers get reliable quality.

Special properties

The timiz pepper in the FINEST FOOD AGE PEPPER COLLECTION is a long pepper; it is clear even from its appearance that it has nothing to do with the ordinary peppercorns found in the shops. The long dark brown “catkins” are the dried infructescences of Piper capense.
